Join us at Cork & Carriage for the third installment of our collaborative series, Cork & Kitchen. This session moves beyond the vinegar shelf to explore the ancient, microbial art of the full sour fermented pickle. Learn to turn local produce into something with deeper flavor and nutritional value using foundational techniques you can replicate at home.

What we’ll cover:

  • The Crunch: How salt and the tannins in local grape leaves work together to keep pickles crisp.

  • The Science: A clear introduction to the art of Lactic Acid Fermentation.

  • Safety & Flavors: How to monitor your ferment’s health and get creative with seasonal aromatics.

With your ticket:

  • Your jar of pickles-to-be: Prepped by you and ready to ferment at home.

  • A glass of wine & charcuterie: a specially paired glass of wine selected by Cork & Carriage along with charcuterie to enjoy during class

  • Recipes: Clear, straightforward instructions so you can expand your pickling at home
